Grammy’s Chocolate Cookies

Sometimes it just does not pay to try to be prepared for the holidays. All of the cookies I made on baking day with my friend Laura are gone. All of them. So now I’m into round 2. This recipe is from a Martha Stewart Special Issue, “Holiday Cookies” that dates back to December 2001 but it has become a family favourite and it does make a lot of cookies. I haven’t tried it but you could roll them in crushed candy canes or add white chocolate chips for something a little different.

Ingredients

2 c plus 2 Tbsp all purpose flour
3/4 c cocoa powder
1 tsp baking soda
1/2 tsp salt
10 ounces unsalted butter (2 1/2 sticks)
2 c sugar
2 large eggs
2 tsp vanilla

Method

  1. Preheat oven to 350 F.
  2. Sift together dry ingredients.
  3. In a Kitchen Aid or with a hand beater, cream butter and sugar until light and fluffy (about 2 min).
  4. Add eggs, vanilla and beat to combine.
  5. Reduce speed to low and add dry ingredients, beat to combine.
  6. Form dough into flattened disk, wrap in plastic and chill for 1 hour.
  7. Line baking sheets with parchment paper and shape dough into 1″ balls.
  8. Roll each in sugar and place 1 1/2″ apart.
  9. Bake 10 to 12 mintues rotating half way through.
  10. Transfer to rack to cool and then transfer cookies from baking sheet to wire rack.

Makes 3-4 dozen depending on how big you roll the dough balls.
