Grammy’s Chocolate Cookies
Sometimes it just does not pay to try to be prepared for the holidays. All of the cookies I made on baking day with my friend Laura are gone. All of them. So now I’m into round 2. This recipe is from a Martha Stewart Special Issue, “Holiday Cookies” that dates back to December 2001 but it has become a family favourite and it does make a lot of cookies. I haven’t tried it but you could roll them in crushed candy canes or add white chocolate chips for something a little different.
Ingredients
2 c plus 2 Tbsp all purpose flour
3/4 c cocoa powder
1 tsp baking soda
1/2 tsp salt
10 ounces unsalted butter (2 1/2 sticks)
2 c sugar
2 large eggs
2 tsp vanilla
Method
- Preheat oven to 350 F.
- Sift together dry ingredients.
- In a Kitchen Aid or with a hand beater, cream butter and sugar until light and fluffy (about 2 min).
- Add eggs, vanilla and beat to combine.
- Reduce speed to low and add dry ingredients, beat to combine.
- Form dough into flattened disk, wrap in plastic and chill for 1 hour.
- Line baking sheets with parchment paper and shape dough into 1″ balls.
- Roll each in sugar and place 1 1/2″ apart.
- Bake 10 to 12 mintues rotating half way through.
- Transfer to rack to cool and then transfer cookies from baking sheet to wire rack.
Makes 3-4 dozen depending on how big you roll the dough balls.
