Daniele’s Peppers and Onions Spaghetti

My friend Daniele is from Milano. A vegetarian, he made this simple, yet flavourful, pasta dish using just red peppers and onions. Despite my crappy olive oil (he made me throw it out), it was delicious. So, I’m off to buy proper olive oil (it should be green not yellow) and in the meantime you can try the recipe for yourself.
Ingredients
- 1-2 large red peppers, diced
- 1 large red onion and one medium yellow onion, diced
- Water to cover the bottom of the pan
- Good quality olive oil
- Salt and pepper to taste
- Freshly grated Parmesan
- Spaghetti
Method
- Place the diced vegetables in a large, deep-sided frying pan.
- Add enough water to some half way up the veg.
- Turn on the heat and let the veggies simmer until tender.
- Pour in a good glug of olive oil (he didn’t measure…so wing it people – sorry), add salt and pepper and let that all cook down until the water evaporates.
- In the meantime, heat the water for the spaghetti and cook until tender (or how you like it).
- Drain pasta, add to frying pan with veg, toss.
- Finish with more olive oil, freshly grated Parmesan cheese and enjoy.
Serve by itself or with a side salad (although Daniele informed me that, “Italians don’t eat salad.”), and a nice glass of red.
