Cathy’s Green Onion Pancake

My daughter loves Chinese green onion pancakes. She particularly likes the ones her friend Steph’s Mom Cathy makes. Cathy graciously shared her recipe with me and I made them tonight. They were delicious. Thank you Cathy!
Ingredients:
2 eggs
1/4 c. water
1/4 c. flour
1/3 tsp of salt
3 chopped green onions (or you can substitute green pepper or celery)
Whisk ingredients together to make a batter. Heat a frying pan and pour in 1 Tbsp oil. When oil is hot ladle batter in (make smallish pancakes or if you have a crepe pan like I do you can make the bigger). Turn over when golden brown and cook another couple minutes until other side is golden brown. Serve hot.
These are simple but delicious and a great side dish.
