Breakfast Cookies #2

This breakfast cookie recipe is easy, quick and makes 18 breakfast cookies. I was going to use honey or agave instead of sugar but discovered I was out so I ended up using brown sugar. You could substitute any kind of nut butter for the peanut butter or use a nut-free spread.

Ingredients

  • 1 cup peanut butter
  • 1/3 cup apple sauce
  • 1 large banana
  • 1 tsp vanilla
  • 2 cups whole oats
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/3 cup brown sugar
  • 1/2 cup dried cranberries
  • 1/2 cup toasted pumpkin seeds
  • 1/2 cup raisins

Method

  1. Put peanut butter, apple sauce, banana and vanilla in the bowl of a stand mixer and mix on low to medium until well combined.
  2. Mix all the dry ingredients together and then add them to the mixing bowl and mix until the ingredients come together.
  3. Let stand for 20 minutes to let the oats absorb some of the liquid.
  4. Preheat oven to 325 degrees F and line a baking tray with a silpat or baker’s parchment.
  5. Scoop a golf ball-sized amount of dough into your hand, roll into a ball, and flatten slightly.
  6. Place cookie dough balls on the baking tray 1″ apart and bake for 18 minutes or until edges start to brown.
  7. Remove from oven and cool on tray for 10 minutes. Then move to a wire rack to cool completely.
  8. Put in an airtight container or freeze them (they freeze well).

Makes 18 cookies.

Almond thumbprint cookies are easy and can be made with any kind of jam that you like. This recipe is based on Martha Stewart’s Iced Thumbprint Cookies recipe, but instead of the icing sugar mixture I used a half-and-half mixture of blueberry and raspberry jam

Salmon Cakes Take 2

Salmon cakes can made from fresh or cooked salmon. Last time I made Fresh Salmon Cakes. This time I baked up a salmon filet that I had in the freezer and used that. This would also be a great recipe for using up left over baked salmon.

The recipe is based on Salmon Cakes from Natasha’s kitchen but I adapted it to what I had on hand.

Ingredients

  • 1/2 lb salmon filet (if frozen, defrost in the fridge the night before)
  • Lawry’s seasoning salt
  • fresh ground black pepper
  • Olive oil
  • 2 small onions, minced
  • 1 stick celery, minced
  • 1/2 Panko bread crumbs
  • 1/2 cup Pastene Italian seasoned bread crumbs
  • 1 large egg beaten
  • 2 Tbsp real full fat mayonnaise
  • 1 tsp Dijon mustard
  • 1 Tbsp capers, chopped
  • handful of fresh parsley, chopped

Method

  1. Preheat Oven to 425˚F. Line a rimmed baking sheet with parchment or a silpat. Place salmon skin-side down, brush with olive oil and season with garlic salt and black pepper.
  2. Bake uncovered for 10-15 min or just until cooked through (my thinner cut wild salmon was closer to 10 minutes). Remove from oven, cover with foil and rest ten minutes. Discard skin, flake salmon with forks, remove any bones, and cool to room temp while prepping remaining ingredients.
  3. Heat a frying pan over medium heat with 1 Tbsp olive oil. Add and minced onion and celery. Sauté 2-3 minutes .
  4. Drain, rinse and pat the capers dry and add to the frying pan. Sauté until onions and celery are soft. Remove from heat and let cool.
  5. In a large mixing bowl, combine cooled flaked salmon, sautéed veg, bread crumbs, 1 beaten eggs, 3 Tbsp mayo, 1 tsp Dijon mustard, salt and pepper to taste, and the fresh parsley fresh parsley.
  6. Stir to combine pop the mixture in the fridge for at least an hour.
  7. Remove from fridge and then form the mixture into 3″ patties thare about 1/2″ thick.
  8. Pour some bread crumbs onto a plate and press the patties into the crumbs on both sides.
  9. Heat a couple tablespoons of olive oil in a non-stick pan (add 1 Tbsp of butter if you feel like it) and once the oil is sizzling start frying off your salmon cakes 2-3 minutes per side – you are looking for a golden crust. You may need to do this in batches to avoid crowding the pan.
  10. Pop the fried salmon cakes back into a an oven preheated to 425˚F  and bake for 5-6 minutes to finish.
  11. Serve with whatever sauce you like.

These freeze really well! To freeze pop them on a cookie sheet and put them in freezer for at least an hour before transferring them to a freezer-proof container.

To reheat from frozen: preheat the oven to 275˚F (low and slow is the key). Place frozen salmon cakes on baking sheet lined with a silpat or baker’s parchment and heat through (takes about 20 minutes from frozen).

I served them with some roasted veg, tumeric rice and a spinach and tomato salad.

Cardamon Bread Pudding came about this year because I was going to make Gingersnap Bread Pudding but the gingersnaps didn’t get made (2021 strikes again). We also had a bunch of whipping cream that need to be used up so I had to improvise. Ingredients

Turkey Croquettes

Turkey croquettes are a great way to use up leftover turkey and mashed potatoes. This recipe is adapted (with thanks) from the Baked Turkey Croquettes recipe from Skinnytaste.com.

Ingredients

  • 2 cups cooked leftover turkey, minced fine
  • 1 cup mashed potatoes – left overs or boil up three large potatoes and mash them with 1/4 cup of the turkey stock
  • 3/4 cup turkey stock or other broth
  • 2 tsp olive oil
  • 4 cloves garlic, minced
  • 2 large shallots, chopped
  • 1/2 cup parsley, chopped
  • 1/4 cup fresh thyme, chopped
  • 1 spring fresh rosemary, chopped
  • salt and fresh ground black pepper
  • 1/2 cup bread crumbs
  • 1 egg, whisked
  • leftover turkey gravy, cranberry sauce or loganberry jam for serving, optional

Method

  1. In a large bowl, mix the mashed potato with 1/4 of the turkey broth, add salt and pepper to taste and set aside.
  2. Sauté garlic, and onions in oil over low heat. Add the herbs and cook until onions are translucent.
  3. Add the minced turkey and the remaining broth, mix well and remove from heat to cool completely.
  4. Add turkey mixture to mashed potatoes and mix well. Adjust seasoning if needed.
  5. Preheat oven to 450°F.
  6. Using 1/4 cup of mixture form into croquettes (use wet hands to keep it from sticking). Place on baker’s parchment and repeat until all the mixture is gone.
  7. Dip each croquette in whisked egg mixture, then roll in breadcrumbs and place on a baker’s parchment lined cookie sheet.
  8. Sprinkle with salt and pepper to taste and any extra seasoning you like.
  9. Bake 15-20 minutes, or until golden.

Serve with gravy, cranberry sauce or lingonberry jam
